- 2 medium zucchinis grated
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh mint chopped
- 2 tablespoons fresh parsley chopped
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
In a large bowl, combine the grated zucchini, crumbled feta, shredded cheddar, chopped mint, chopped parsley, eggs, flour, baking powder, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. While the oil is heating, shape the zucchini mixture into small patties.
Once the oil is hot, carefully place the patties in the skillet and cook until they're golden brown and crispy, about 3-4 minutes per side.
Drain the fritters on a paper towel to remove excess oil.
Serve the Zucchini Fritters hot with your favorite dipping sauce.
