Ingredients
  

For the Chia Pudding:

  • ½ cup chia seeds
  • 2 cups unsweetened coconut milk
  • 3 tablespoons maple syrup or to taste
  • 1 teaspoon vanilla extract

For the Strawberry Puree:

  • 1 ½ cups fresh strawberries hulled
  • 1 tablespoon maple syrup optional, for sweetness

For Topping (Optional):

  • Fresh sliced strawberries
  • Shredded coconut

Instructions
 

Prepare the Chia Pudding:

  • In a mixing bowl, whisk together the chia seeds, coconut milk, maple syrup, and vanilla extract.
  • Stir well to combine, then let the mixture sit for 10 minutes. Stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours or overnight until thickened.

Make the Strawberry Puree:

  • Add the strawberries and maple syrup to a blender or food processor. Blend until smooth.
  • Taste and adjust sweetness if needed.

Assemble the Pudding:

  • Layer the chia pudding and strawberry puree in jars or bowls. Create as many layers as you like!
  • Top with fresh sliced strawberries and shredded coconut if desired.

Serve:

  • Enjoy immediately or store in the fridge until ready to serve.
