- 2 oz smoked salmon thinly sliced
- 1 tablespoon fresh dill or chives chopped
- Salt and pepper to taste
- 1 tablespoon butter or oil
- Optional: 1 tablespoon cream cheese or a handful of baby spinach
Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until frothy.
Heat butter or oil in a non-stick skillet over medium heat.
Pour the whisked eggs into the pan, tilting to spread evenly.
Cook gently, lifting the edges with a spatula to let uncooked egg flow underneath.
Once mostly set, lay the smoked salmon on one side of the omelette.
Sprinkle fresh dill (or chives) and add optional toppings like cream cheese or spinach.
Fold the omelette in half and cook for another 30 seconds.
Slide onto a plate and serve immediately.
