Ingredients
  

  • 4 large eggs
  • 2 oz smoked salmon thinly sliced
  • 1 tablespoon fresh dill or chives chopped
  • Salt and pepper to taste
  • 1 tablespoon butter or oil
  • Optional: 1 tablespoon cream cheese or a handful of baby spinach

Instructions
 

  • Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until frothy.
  • Heat butter or oil in a non-stick skillet over medium heat.
  • Pour the whisked eggs into the pan, tilting to spread evenly.
  • Cook gently, lifting the edges with a spatula to let uncooked egg flow underneath.
  • Once mostly set, lay the smoked salmon on one side of the omelette.
  • Sprinkle fresh dill (or chives) and add optional toppings like cream cheese or spinach.
  • Fold the omelette in half and cook for another 30 seconds.
  • Slide onto a plate and serve immediately.
