Date Snickers (Chocolate Covered Dates)

Sweet and chewy Medjool dates stuffed with peanut butter and nuts, then dipped in chocolate for a healthier, homemade twist on Snickers!

Ingredients
  

  • 10 Medjool dates pitted
  • 1/4 cup creamy peanut butter
  • 1/4 cup roasted peanuts or any nuts you prefer
  • 1/2 cup dark chocolate chips or semi-sweet chocolate chips
  • 1 teaspoon coconut oil optional, for smoother chocolate
  • Flaky sea salt optional, for topping

Instructions
 

  • Slice each date along one side and remove the pit if it’s not already pitted.
  • Fill each date with about a teaspoon of peanut butter, then add a few roasted peanuts for crunch.
  • Melt the chocolate in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth. Add a teaspoon of coconut oil if needed.
  • Dip each stuffed date into the melted chocolate, using a fork to ensure it’s fully coated. Let any excess chocolate drip off.
  • Place the chocolate-covered dates on a parchment-lined baking sheet. Sprinkle with flaky sea salt, if desired.
  • Chill in the fridge for about 20 minutes or until the chocolate hardens.

  • Prep the dates by slicing them open and removing the pits.
  • Stuff each date with peanut butter and roasted peanuts.
  • Melt the chocolate (with coconut oil for easier dipping, if desired).
  • Dip the dates into the chocolate, coat completely, and lay them on parchment paper.
  • Sprinkle with flaky sea salt or crushed nuts, then chill until set.
