  • 2 cloves garlic minced

  • 1 cup broccoli florets
  • 1 cup bell pepper sliced (red or yellow)
  • 1 cup snap peas or green beans
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions for garnish

For the Stir-Fry Sauce:

  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha adjust to taste
  • 1 tablespoon water to thin the sauce if needed

Instructions
 

Cook the Noodles:

  • Begin by cooking the noodles according to the package instructions. Make sure to cook them until they are al dente. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.

Prepare the Stir-Fry Sauce:

  • In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sriracha, and water. This will be your stir-fry sauce. Adjust the amount of sriracha based on your preferred spice level.

Sauté Aromatics:

  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and grated ginger to the pan and sauté for about 30 seconds until fragrant. Be careful not to burn them.

Add Vegetables:

  • Next, add the broccoli florets, bell pepper slices, snap peas, and shredded carrots to the skillet. Stir-fry for about 5–7 minutes until the vegetables are tender-crisp. You can add a splash of water if needed to help steam the vegetables and prevent sticking.

Combine Noodles and Sauce:

  • Once the vegetables are cooked to your liking, add the cooked noodles to the skillet along with the prepared stir-fry sauce. Toss everything together until well combined and heated through. If necessary, add more water to thin out the sauce.
