Vegan Apple Tart (Sugar-Free)

Ingredients
  

For the Crust:

  • 1 1/2 cups rolled oats use certified gluten-free if needed
  • 1 cup nuts almonds, walnuts, or pecans
  • 1 cup pitted dates

For the Filling:

  • 4-5 medium apples Honeycrisp, Fuji, Gala, Granny Smith, or a mix, peeled, cored, and sliced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions
 

Prepare the Crust:

  • Place the rolled oats, nuts, and pitted dates in a food processor. Process until the mixture is finely ground and sticky, forming a dough-like consistency. Press the mixture evenly into the bottom and up the sides of a 9 or 10-inch tart pan.

Prepare the Apple

  • Filling: In a large mixing bowl, combine the sliced apples, ground cinnamon, ground nutmeg, and lemon juice. Toss gently to coat the apples evenly with the spices and lemon juice.

Assemble and Bake the Tart:

  • Arrange the spiced apple slices in the prepared crust in an overlapping pattern or any design you like.
  • Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the crust is lightly golden brown and the apples are tender and slightly softened.
  • Let the tart cool completely before slicing and serving.
