Tuna, Caper & Chilli Spaghetti

Ingredients
  

  • 8 oz spaghetti
  • 2 cans 5 oz each tuna in olive oil, drained
  • 1/4 cup capers drained and rinsed
  • 1 teaspoon red chili flakes
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Cook the spaghetti according to the package instructions until al dente. Reserve some pasta water before draining.
  • In a large sauté pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the tuna, capers, and chili flakes to the pan. Cook for an additional 2-3 minutes, until the flavors meld together.
  • Add the cooked spaghetti to the pan and toss gently to coat in the tuna and caper mixture. If needed, add some pasta water to adjust the consistency.
  • Squeeze the lemon juice over the spaghetti and sprinkle with fresh parsley. Season with salt and pepper to taste.
