Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cups chopped veggies spinach, mushrooms, zucchini, etc.
  • 8 large eggs
  • ¼ cup milk
  • 1 cup shredded cheese cheddar, feta, etc.
  • Salt and pepper to taste
  • Fresh herbs optional, for garnish

Instructions
 

  • Preheat the oven to 375°F.
  • In an oven-safe skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté for 5 minutes, or until softened.
  • Add any additional veggies and cook for another 2-3 minutes.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Pour the egg mixture over the veggies in the skillet. Sprinkle the shredded cheese on top.
  • Transfer the skillet to the oven and bake for 15-20 minutes, or until the eggs are set and the top is golden brown.
  • Let the frittata cool for 5-10 minutes, then slice and serve. Garnish with fresh herbs if desired. Enjoy!
