Sweet Potato and Goat Cheese Crostini

Crispy baguette slices topped with roasted sweet potatoes, creamy goat cheese, and a drizzle of honey for an elegant appetizer.

- 1 medium sweet potato sliced into thin rounds
- 1 baguette sliced into 12 pieces
- 4 oz goat cheese softened
- 2 tbsp honey
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh thyme or rosemary for garnish
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Arrange the sweet potato slices on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20 minutes, flipping halfway through.
While the sweet potatoes roast, place the baguette slices on a separate baking sheet. Toast in the oven for 5 minutes until golden.
Spread a layer of goat cheese onto each toasted baguette slice.
Top each with a roasted sweet potato slice.
Drizzle honey over the crostini and garnish with fresh thyme or rosemary.
These crostini are perfect for holiday parties or casual gatherings.
Experiment with additional toppings like balsamic glaze or crushed nuts for added flavor and texture.
For a vegan version, swap goat cheese for a plant-based cheese and honey for maple syrup.
