Slow Cooker Parmesan Garlic Chicken and Potatoes

A comforting one-pot slow cooker meal with tender chicken, buttery potatoes, and a rich Parmesan garlic sauce. Perfect for busy weeknights or cozy family dinners!

Ingredients
  

  • 4-6 chicken thighs or breasts bone-in or boneless
  • 1 ½ lbs baby potatoes halved or quartered
  • 4 tablespoons butter cut into small pieces
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese plus extra for garnish

Instructions
 

  • (Optional) Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
  • In a large mixing bowl, toss the baby potatoes with olive oil, garlic, Italian seasoning, salt, and pepper.
  • Add the seasoned potatoes to the bottom of the slow cooker. Place the chicken on top of the potatoes.
  • Pour the chicken broth over everything and dot with butter pieces.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the potatoes are cooked through.
  • During the last 30 minutes of cooking, sprinkle Parmesan cheese over the chicken and potatoes. Cover and let it melt.
  • Garnish with additional Parmesan and fresh parsley before serving.

Notes

Instructions Variant (Simplified):
Toss potatoes with olive oil, garlic, and seasonings. Add to slow cooker.
Place chicken on top, pour in broth, and dot with butter.
Cook on low for 6-7 hours (or high for 3-4). Add Parmesan during the last 30 minutes.
