Simple Green Salad

- 6 cups mixed greens romaine, spinach, or spring mix
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- 1/2 cup shredded carrots
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and shredded carrots.
In a small jar or bowl, mix olive oil, lemon juice, honey, Dijon mustard, salt, and pepper. Shake or whisk until emulsified.
Drizzle the dressing over the salad.
Toss gently to combine and serve immediately.
