Roasted Garlic and Herb Cheese Ball

- 1 head garlic
- 8 oz cream cheese softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh chives chopped
- 2 tbsp fresh parsley chopped (plus more for coating)
- 1 tsp lemon juice
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup finely chopped pecans or walnuts optional, for coating
Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes. Let cool and squeeze the cloves out.
In a large bowl, mix cream cheese, cheddar, Parmesan, roasted garlic, lemon juice, smoked paprika, salt, and pepper until smooth. Fold in chives and parsley.
Scoop the mixture onto plastic wrap, shape into a ball, and chill for at least 1 hour.
Roll the chilled cheese ball in chopped nuts and parsley until fully coated.
Serve with crackers, veggies, or bread.
Alternate Instructions:
Roast garlic and prepare softened cheeses as above.
Blend all ingredients except nuts and parsley coating in a food processor for a smoother consistency.
Chill, then roll in your desired coating before serving.
