Ingredients
  

  • 2 cups heavy cream
  • 1 can 14 oz sweetened condensed milk
  • 1/4 cup pistachio paste or butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios plus extra for coating
  • 1/2 cup chocolate chips optional, for drizzling

Instructions
 

Step 1: Prep the Ingredients

  • Gather all your ingredients and ensure the heavy cream and sweetened condensed milk are cold.

Step 2: Make the Ice Cream Base

  • In a large bowl, whisk together 2 cups heavy cream, 1 can (14 oz) sweetened condensed milk, 1/4 cup pistachio paste or butter, and 1 tsp vanilla extract until smooth and well combined.

Step 3: Add the Pistachios

  • Fold in 1/2 cup chopped pistachios, reserving some for the coating.

Step 4: Freeze the Mixture

  • Pour the mixture into a lined loaf pan or rectangular baking dish.
  • Cover with plastic wrap or aluminum foil and freeze for at least 4-6 hours, or until firm.

Step 5: Cut into Bars

  • Once frozen, remove the ice cream block from the pan and cut it into bars or rectangles.

Step 6: Coat with Pistachios

  • Press the reserved chopped pistachios onto the sides of each bar for a crunchy coating.

Step 7: Optional Chocolate Drizzle

  • Melt 1/2 cup chocolate chips and drizzle over the bars for an extra indulgent touch.

Step 8: Freeze Again

  • Place the coated bars on a parchment-lined tray and freeze for another 30 minutes to set.

Step 9: Serve and Enjoy

  • Serve immediately or store in an airtight container in the freezer.
