- 3 large Meyer lemons zested and juiced
- 3 large eggs
- 2 egg yolks
- 1 cup granulated sugar
- 2 cups whole milk
- 1/2 cup heavy cream
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
Garnish with whipped cream or lemon zest before serving.
Zest and juice the Meyer lemons.
Whisk sugar, cornstarch, and salt in a saucepan.
Gradually whisk in milk, cream, eggs, and yolks.
Cook over medium heat, whisking constantly, until thickened.
Stir in lemon zest, juice, and vanilla.
Strain the mixture and pour into ramekins.
Chill for at least 4 hours or overnight.
