Ingredients
  

  • 3 large Meyer lemons zested and juiced
  • 3 large eggs
  • 2 egg yolks
  • 1 cup granulated sugar
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Garnish with whipped cream or lemon zest before serving.
  • Zest and juice the Meyer lemons.
  • Whisk sugar, cornstarch, and salt in a saucepan.
  • Gradually whisk in milk, cream, eggs, and yolks.
  • Cook over medium heat, whisking constantly, until thickened.
  • Stir in lemon zest, juice, and vanilla.
  • Strain the mixture and pour into ramekins.
  • Chill for at least 4 hours or overnight.
