Mediterranean Veggie Pasta
A quick, healthy pasta dish loaded with Mediterranean vegetables, garlic, and tangy feta.

- 8 oz pasta penne, fusilli, or farfalle
- 1 medium zucchini diced
- 1 red bell pepper diced
- 1 small red onion diced
- 1 cup cherry tomatoes halved
- 3 garlic cloves minced
- 2 tbsp olive oil
- 1/4 cup crumbled feta cheese optional
- Salt and pepper to taste
- Red pepper flakes to taste
- Fresh parsley or basil for garnish
- Juice of half a lemon
Cook pasta according to package instructions. Reserve 1/2 cup of pasta water.
Heat olive oil in a skillet. Sauté onion, bell pepper, and zucchini until tender. Add garlic and cook for 1 minute.
Toss cherry tomatoes into the skillet. Cook until slightly softened.
Combine cooked pasta with the vegetables. Add reserved pasta water as needed.
Season with salt, pepper, and red pepper flakes. Garnish with feta and herbs. Serve with lemon juice.
