Mac and Cheese

Ingredients
  

  • 16 oz elbow macaroni or pasta of choice
  • 4 tbsp butter
  • ¼ cup all-purpose flour
  • 4 cups milk whole or 2%
  • 3 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp mustard powder optional
  • Salt and pepper to taste
  • ½ cup breadcrumbs optional, for topping
  • 2 tbsp melted butter optional, for topping

Instructions
 

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for 1-2 minutes to remove the raw flour taste.
  • Gradually whisk in the milk, ensuring no lumps form. Cook until the mixture thickens, about 5-7 minutes.
  • Reduce the heat to low. Stir in the shredded cheddar and mozzarella cheese until melted and smooth. Add mustard powder (if using) and season with salt and pepper.
  • Add the cooked pasta to the cheese sauce and toss to coat.
  • (Optional) For a baked version, transfer the mac and cheese to a greased 9x13-inch baking dish. Mix breadcrumbs with melted butter and sprinkle over the top. Bake at 375°F for 20-25 minutes, or until golden and bubbly.
  • Serve immediately and enjoy!
