Ingredients
  

  • 1 cup almond butter
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup oat flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a large mixing bowl, whisk together almond butter, maple syrup, coconut oil, and vanilla extract until smooth.
  • In a separate bowl, sift together almond flour, oat flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a thick batter forms.
  • Fold in the chocolate chips, reserving a few for topping.
  • Spread the batter evenly into the prepared baking pan. Sprinkle reserved chocolate chips on top.
  • Bake for 22–25 minutes, or until the edges are golden brown and the center is set.
  • Let the blondies cool completely in the pan. Once cooled, slice into 9 squares and enjoy!
