For the Gnocchi:
- 2 lbs potatoes about 4 medium potatoes
- 1 cup whole wheat flour
- 1 large egg
- 1 teaspoon salt
For the Sauce:
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 cups fresh spinach
- 2 cups diced tomatoes
- Salt and pepper to taste
For the Gnocchi:
Boil the potatoes until tender, about 20-25 minutes. Drain and let them cool slightly.
Peel the potatoes and mash them until smooth. You can use a potato masher or ricer for this step.
In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. Be careful not to overwork the dough.
On a lightly floured surface, roll out the dough into long ropes, about 1/2-inch thick. Cut the ropes into 1-inch pieces to form the gnocchi.
Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.
For the Sauce:
In a large sauté pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Add the spinach and tomatoes to the pan. Cook until the spinach is wilted and the tomatoes are soft, about 5-7 minutes.
Season the sauce with salt and pepper to taste.
Add the cooked gnocchi to the sauce and toss gently to coat. Serve hot and enjoy!
