Healthy Gnocchi

A delicious and nutritious gnocchi recipe made with whole wheat flour and packed with vegetables. Perfect for a comforting meal that's good for you too.

Ingredients
  

For the Gnocchi:

  • 2 lbs potatoes about 4 medium potatoes
  • 1 cup whole wheat flour
  • 1 large egg
  • 1 teaspoon salt

For the Sauce:

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 cups fresh spinach
  • 2 cups diced tomatoes
  • Salt and pepper to taste

Instructions
 

For the Gnocchi:

  • Boil the potatoes until tender, about 20-25 minutes. Drain and let them cool slightly.
  • Peel the potatoes and mash them until smooth. You can use a potato masher or ricer for this step.
  • In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. Be careful not to overwork the dough.
  • On a lightly floured surface, roll out the dough into long ropes, about 1/2-inch thick. Cut the ropes into 1-inch pieces to form the gnocchi.
  • Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

For the Sauce:

  • In a large sauté pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the spinach and tomatoes to the pan. Cook until the spinach is wilted and the tomatoes are soft, about 5-7 minutes.
  • Season the sauce with salt and pepper to taste.
  • Add the cooked gnocchi to the sauce and toss gently to coat. Serve hot and enjoy!
