Ingredients
  

  • 3 large eggs
  • 1 cup shredded hash browns fresh or frozen, thawed
  • 1/4 cup shredded cheese cheddar, mozzarella, or your choice
  • 2 tsp butter or olive oil
  • Salt and pepper to taste

Instructions
 

  • Grate or prepare hash browns. Heat butter in a nonstick skillet and cook hash browns until crispy. Set aside.
  • Whisk eggs with salt and pepper. Pour into the skillet and stir gently as they set.
  • Place cooked hash browns and cheese on one half of the eggs. Fold the omelette and press gently to seal.
  • Slide onto a plate, garnish with herbs, and serve with your favorite toppings.
