Hash Brown-Stuffed Omelette

- 3 large eggs
- 1 cup shredded hash browns fresh or frozen, thawed
- 1/4 cup shredded cheese cheddar, mozzarella, or your choice
- 2 tsp butter or olive oil
- Salt and pepper to taste
Grate or prepare hash browns. Heat butter in a nonstick skillet and cook hash browns until crispy. Set aside.
Whisk eggs with salt and pepper. Pour into the skillet and stir gently as they set.
Place cooked hash browns and cheese on one half of the eggs. Fold the omelette and press gently to seal.
Slide onto a plate, garnish with herbs, and serve with your favorite toppings.
