For the Marinade:
- ¼ cup olive oil
- 2 tbsp fresh lemon juice
- 2 garlic cloves minced
- 1 tbsp fresh parsley chopped (or 1 tsp dried parsley)
- 1 tsp fresh dill chopped (or ½ tsp dried dill)
- Salt and pepper to taste
For the Walleye:
- 4 walleye fillets about 6 oz each
- Lemon wedges for serving
- Fresh herbs for garnish
Prepare the Marinade:
In a small bowl, whisk together olive oil, lemon juice, garlic, parsley, dill, salt, and pepper.
Place the walleye fillets in a shallow dish or resealable bag. Pour the marinade over the fish, turning to coat evenly. Let marinate for 10-15 minutes.
