Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 sandwich buns brioche, ciabatta, or whole wheat
  • 4 lettuce leaves
  • 1 large tomato sliced

Optional toppings: cheese (Swiss, cheddar, or provolone), avocado slices, onions, pickles

Optional condiments: mayo, mustard, chipotle sauce

Instructions
 

Prepare the Marinade

  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Whisk until well blended.

Marinate the Chicken

  • Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is coated evenly. Cover and refrigerate for at least 20 minutes, or up to 4 hours for a deeper flavor.

Preheat the Grill

  • Heat your grill or grill pan to medium-high heat. Lightly oil the grill grates or the pan to prevent sticking.

Grill the Chicken

  • Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for 4-6 minutes per side, depending on thickness, until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes to retain its juices.

Prepare Toppings

  • While the chicken is grilling, wash and dry the lettuce leaves, slice the tomato, and prepare any additional toppings such as avocado, cheese, or onions.

Toast the Buns

  • Lightly butter the sandwich buns and toast them on the grill or in a skillet over medium heat until golden and crisp.

Assemble the Sandwich

  • Place a lettuce leaf on the bottom half of each toasted bun.
  • Add the grilled chicken breast on top of the lettuce.
  • Layer on the sliced tomatoes and any additional toppings like cheese, avocado, or onions.
  • Spread your favorite condiments (mayo, mustard, or chipotle sauce) on the top half of the bun.
  • Close the sandwich with the top bun.

Serve and Enjoy

  • Serve the grilled chicken sandwiches immediately while the chicken is still warm, alongside chips, fries, or a fresh salad for a complete meal.
