Greek-Style Omelette
A flavorful omelette filled with fresh vegetables, feta cheese, and oregano.

- 2 large eggs
- 1 tablespoon olive oil
- 1/4 red bell pepper chopped
- 1/4 small onion chopped
- 1/4 cup chopped tomato
- 1/4 cup crumbled feta cheese
- 1/2 teaspoon dried oregano or 1 teaspoon fresh
- Salt and pepper to taste
Whisk eggs with salt and pepper.
Heat olive oil in a non-stick skillet over medium heat.
Sauté bell pepper and onion until softened. Add tomato and cook briefly.
Pour in eggs and cook until edges set.
Push cooked egg towards the center, allowing uncooked egg to flow underneath.
Sprinkle feta and oregano on one half of the omelette.
Fold the other half over the filling.
Cook until cheese is melted and omelette is cooked through.
Serve immediately.
