Greek-Style Omelette

A flavorful omelette filled with fresh vegetables, feta cheese, and oregano.

Ingredients
  

  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/4 red bell pepper chopped
  • 1/4 small onion chopped
  • 1/4 cup chopped tomato
  • 1/4 cup crumbled feta cheese
  • 1/2 teaspoon dried oregano or 1 teaspoon fresh
  • Salt and pepper to taste

Instructions
 

  • Whisk eggs with salt and pepper.
  • Heat olive oil in a non-stick skillet over medium heat.
  • Sauté bell pepper and onion until softened. Add tomato and cook briefly.
  • Pour in eggs and cook until edges set.
  • Push cooked egg towards the center, allowing uncooked egg to flow underneath.
  • Sprinkle feta and oregano on one half of the omelette.
  • Fold the other half over the filling.
  • Cook until cheese is melted and omelette is cooked through.
  • Serve immediately.
