Curried Cod

- 4 cod fillets
- 2 tablespoons olive oil
- 1 large onion finely chopped
- 3 cloves garlic minced
- 1 tablespoon grated ginger
- 2 tablespoons curry powder
- 1 can 14 oz diced tomatoes
- 1 can 14 oz coconut milk
- 1 cup frozen peas and carrots
- Salt and pepper to taste
- Fresh cilantro for garnish
In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and grated ginger to the pan and cook for an additional 1 minute, until fragrant.
Stir in the curry powder and cook for another minute to release the flavors.
Add the diced tomatoes, coconut milk, and frozen peas and carrots to the pan. Stir well and let it simmer for about 10 minutes, until the sauce thickens slightly.
Nestle the cod fillets into the curry sauce and let them cook for about 10-15 minutes, until flaky and tender.
Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
