Curried Cod

Ingredients
  

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz coconut milk
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and grated ginger to the pan and cook for an additional 1 minute, until fragrant.
  • Stir in the curry powder and cook for another minute to release the flavors.
  • Add the diced tomatoes, coconut milk, and frozen peas and carrots to the pan. Stir well and let it simmer for about 10 minutes, until the sauce thickens slightly.
  • Nestle the cod fillets into the curry sauce and let them cook for about 10-15 minutes, until flaky and tender.
  • Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
