- 2 large cucumbers thinly sliced
- ½ red onion thinly sliced
- ¼ cup white vinegar
- 2 tbsp granulated sugar
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh dill or parsley chopped
In a large bowl, combine the sliced cucumbers and red onion.
In a small bowl, whisk together the vinegar, sugar, salt, and black pepper until the sugar and salt are dissolved.
Pour the dressing over the cucumbers and onions. Toss gently to combine.
Let the salad marinate in the fridge for at least 30 minutes to allow the flavors to meld together.
Just before serving, sprinkle with fresh dill or parsley and give it a quick toss.
