- 1 baguette or rustic Italian bread sliced into 1/2-inch thick pieces
- 2 cups ripe tomatoes diced
- 2 tablespoons fresh basil chopped
- 1 garlic clove halved
- 3 tablespoons olive oil plus extra for brushing
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
Preheat oven to 400°F. Arrange bread slices on a baking sheet and brush with olive oil. Toast for 8–10 minutes until golden.
In a mixing bowl, combine diced tomatoes, basil, olive oil, balsamic vinegar, salt, and pepper. Let marinate for 15 minutes.
Rub the toasted bread slices with the halved garlic clove for flavor.
Spoon the tomato mixture onto the bread just before serving. Enjoy fresh!
